The first hit of cinnamon and slight ginger gives the sherry sweetness some lift, rather than letting caramel and dried fruit sit on their own. The palate then moves toward dark chocolate, while the finish keeps pepper alongside a little dryness and salt. That shift from sweet fruit to bitter chocolate and pepper is the part I find most interesting: it sounds rounded without losing its spice.
