Caol Ila The Single Cask 12 Year Old, Bourbon Hogshead Cask, Cask #1907-301909, 2007, Claxton's, 51.5%

87 / 100

The sweetness here has clear counterweights: warm banana bread and brown sugar on the nose meet roasted salted nuts, baking spices and lemon curd on the palate. That contrast keeps the sweeter notes from taking over, while the fragrant cardamom and slight smoke add a measured close. I like that the character seems to move between soft, baked sweetness and savory, spiced details rather than leaning on sugar alone.
