Convalmore Rare Old 33 Year Old, Sherry Cask, 1975, Gordon & MacPhail, 43%

A Maltiply member's tasting notes and whisky impression.

90 / 100

The sherry-cask designation is useful context, but it doesn’t establish a finishing stage or cask sequence, so I wouldn’t pin particular flavours on the cask. What stands out in the documented character is the meeting of waxy notes with bright fruit, followed by citrus and gentle oak spice. That gives this mature Speyside malt a measured, layered character rather than making the cask label do all the explaining.

Nose
Beehive and waxy notes, wax candles, graphite and polished floors, Honeyed notes and pollen; oranges, mirabelles and ripe bananas, Soft hints of leaves and library dust
Palate
Oily texture and fruitiness: apples, mirabelles, whitecurrant and juicy pear, Hints of sunflower oil, Soft resinous notes and citrus peel towards the end
Finish
Fairly long, still on waxy citrus, Some hoppy notes and gentle oak spices
