Nose
Rich barley, fruity notes of plum, raspberry, cherry, and dark fruits, with citrus, spices, and creamy sweetness. Hints of gentle peat, oak, molasses, vanilla, and caramel are present, sometimes with floral notes, orange zest, almond biscotti, or a musty earthiness.
Palate
Oaky and rich, with a gentle peat that develops into coffee and dark chocolate. Flavors of fruit, grain, ginger, molasses, caramel, peach, green pepper, and earthy black truffle are noted. Some detect cream soda, baking spices like clove, cardamom, and cinnamon, or effervescent barley and sour fruit.
Finish
Long and spiced, with notes of marmalade and sweetness. It can be dry, with a strong hit of spice, burnt sugar, oak, coriander, dark roasted malt, stout beer, Dutch cocoa powder, or a lingering mild peat. Some find chewy sour fruit syrup, sweet liquorice tang, or honeyed bread.
