Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. They are also renowned independent bottlers, selecting and bottling unique casks from various Scottish distilleries under their Thompson Bros label. This particular release is an 11-year-old single malt from an undisclosed Orkney distillery, distilled in 2011 and bottled in 2022.

Medium-bodied, gentle, citrus and chalk, maritime, oily tinned fish, citrus sorbet, hay, hints of coal, rust, medicinal herbs, ginger, waxy orange peel, heathery smoke, salty, peaty, sweeter notes, tobacco.
Finish
Medium-length, mild, citrus and sea, herbaceous hints of coriander leaf, sea salt, oily texture but with a surprisingly dry, lingering finish, obvious leather, seaweed.
