Nose
Coastal air and fresh earth, with poached pear, caramel cream, and subtle orchard fruit sweetness, soft vanillas, whipped cream, custard doughnuts, and a little coastal salinity. Hints of pear flesh, lemon balm, candle wax and fresh pressed green grape juice.
Palate
Vibrant and oily, coastal notes with minerality and a touch of rind; caramelised apples, white chocolate, and custard creams, lifted by a hint of ginger spice. Warm toffee and caramel sweetness, rye biscuits, cinnamon sugar doughnuts, hazelnut spread, with a nice oily texture and a bit of sea salt.
Finish
Long and warming, with vanilla, nutmeg and a continuing minerality. Elegant long-lasting aftertaste, with a bit of an alcohol kick, black pepper and freshly grated ginger spice, and a touch of grapefruit with a bit of bitterness.
