Nose
Aside from a little sulphur, the bouquet warms up with ginger biscuits, toasted oats, fresh fruit cake and raisin slice. The nose smells like a fine fino sherry. The salt, the spray, the nuttiness. Some oyster shell and leather. With time some distinct caramel and salted toffee notes ring out.
Palate
Intense and oily - without being hot - it's a sherry monster: Dried fruits and baking spices dovetail into a superb cascade of sticky date and caramel fudge. Aged muscat, old leather and oloroso complete the picture. Creamy with burnt wood giving way to lots of stone fruit and then camp fire rocks with a driving minerality.
Finish
Special. No wonder these bottlings are sought after. The finish has great clarity! Fun boiled sweets, fruit tingles and a drop of sherry saltiness.
