Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. While waiting for the whisky to mature, they also became independent bottlers, releasing carefully selected casks under the Thompson Bros label [5, 14]. This Ben Nevis 2013 7 Year Old is an independently bottled single malt whisky, distilled in 2013 and matured for 7 years before being bottled at 50% ABV. It was taken from various Sherry casks, with an outturn of 1,013 bottles. The label features artwork by designer and illustrator Karon Mabon [2, 3, 13].

Nose
Roasted hazelnuts and almonds, with sweeter hints of caramel and Seville orange marmalade. Creamy caramel, orange cake, toasted nuts and hints of aniseed and burnt rubber. [2, 13]
Palate
Drying dark chocolate hints, more citrus, a soft smoky hint developing later on. Orange citrus, dark chocolate, Snickers bars and soft smoke. Heavy, viscous, chewy, and oily with unsweetened cocoa, leather, prunes, dates, blackcurrant, black peppercorn spice and peanut butter nuttiness. [2, 13, 15]
Finish
Werther's Original, banana fritters, coffee. Butterscotch, banoffee pie and espresso. Medium length, somewhat dry and bitter, with more cocoa, leather, and pencil eraser, fading with a wine-like acid grip and peppery spice. [2, 13, 15]
