Description

A Speyside distillery that makes a range of different single malt styles. Its primary make is a non-peated spirit, however it also does runs of peated and triple-distilled spirit and is one of only a handful of distilleries in Scotland to still operate its own in-house floor maltings. This is an independent bottling by Eiling Lim in collaboration with Shinanoya, Japan, matured for 19 years in a refill sherry cask.

Nose
Touch of gun powder and matchsticks to start. As it opens, stewed fruits, chocolate, red fruits, and plum appear. A harmonious blend of cooked apples and hay, with hints of heather, butterscotch, marzipan, menthol, wood shavings, caramelized bananas, almonds, and brown crust from freshly baked bread.
Palate
Plenty of stewed fruits, grapefruit peel, plums, raisins, raspberry cordial, and red cherry lolly. Syrupy and long. A bold and creamy whisky, rich with warm notes of butterscotch, caramel, and almonds. A delicate white pepper spiciness balances the sweetness, with a dry and salty touch.
Finish
Long and lasting, making an intriguing and lasting impression.
