Description

Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment and traditional methods, including sourcing 100% of their barley from a single English farm, floor malting, and using direct-fired copper pot stills. This is a limited release single malt from Bimber distillery, matured exclusively in an ex-rye cask (#237) and bottled in 2025 in collaboration with Al Capone, a whisky retailer in Poland.

Nose
Light smoke, hay, malty notes, oak and citrus. As it matures in the glass, intense notes of vanilla and caramel emerge, as well as sweet milk chocolate, a hint of dust and sweet, slightly fermented fruits. Smoke remains only in the background. Alcohol is practically imperceptible.
Palate
Quite oily, delicate at first, coffee, cocoa, vanilla, sweet chocolate, more coffee, this time with milk, and a hint of smoke, but only in the background.
Finish
At first long, peppery and warming, sweet, tart, smoky like an ashtray, after a while the sharpness turns into a sweet, pleasant tartness, vanilla cappuccino, and finally the bitterness of oak remains.
