Description

Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This limited edition, Bimber Klub 52.8% Release #1 – Pedro Ximénez Cask, was crafted in the heart of England and bottled in 2020. It was matured in ex-bourbon oak casks and finished in Pedro Ximénez sherry butts.
