Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This particular release, Bimber Single Cask #409 The Spirit Of The Underground South Kensington, is part of 'The Spirit of the Underground' series, an officially licensed collaboration with Transport for London, celebrating London's iconic tube stations. It is a single cask, ex-bourbon maturation, and was bottled as part of Release No. 8 of the series.
