Description

A distillery located in the Park Royal area of north-west London. Opened in 2016, its operates a "farm-to-bottle" approach, sourcing 100% of its barley from a single producer and using traditional floor maltings and slow fermentation techniques. The brand name used by the Dornoch Distillery Company to bottle its own single malt whiskies, as well as a range of independent bottlings of whisky and br. Bimber Distillery was established in 2015 by Dariusz Plazewski in London, England. It is known for crafting artisanal whiskies using traditional methods and locally sourced ingredients, with a focus on rich, complex flavors.

Nose
Somewhat floral and pretty fruity with some green beans, apple sauce, apricots, passion fruit, sweet dark honey notes, and light perfume-y touches. A whiff of grapefruit, melon, tinned apricots and pears, a drop of honey, red apples, a pinch of ginger, and a faint floral note.
Palate
An oily, thick mouthfeel with fantastic fruity arrival, plenty of citrus, tinned pineapple and mangoes, chalk, white pepper, red apples, milk chocolate, vanilla, ginger, cinnamon, and black pepper. Water brings out mustier notes and melon.
Finish
Lingering orchard fruits, cinnamon, pepper, a touch of galia melon, honey, caramel, milk chocolate, and red apples.
