Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a handcrafted approach to whisky production, using traditional methods like floor malting, long fermentation, and direct-fired copper stills. All bottlings are non-chill filtered and bottled at natural colour. This 'Year of the Rabbit 2023 China Edition' is a small batch release.
