Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This limited edition, wax-sealed single malt, 'Spectre's Craft', was released for Halloween 2024. It has been matured in a combination of re-charred American oak and Spanish Oloroso sherry casks. Limited to 689 individually numbered bottles, this ghoulish creation comes with its' own myth, suggesting a 19th-century ghostly figure roams the distillery's copper stills, guiding workers in perfecting every last drop. Bimber Distillery operates a 'farm-to-bottle' approach, sourcing 100% of its barley from a single producer and using traditional floor maltings and slow fermentation techniques.
