From London-based whisky powerhouse, Bimber distillery comes this inventive single cask single malt bottling in collaboration with Transport for London. The local spirit aged in a single handpicked pedro ximenez barrel where it took on a rich Spanish influence. A totally unique and limited run by Bimber distillery. Notes of toffee apple and roasted almonds. Bimber Distillery, located in the Park Royal area of north-west London, opened in 2016 and operates a 'farm-to-bottle' approach, sourcing 100% of its barley from a single producer and using traditional floor maltings and slow fermentation techniques.
