Nose
Char siew glaze, toffee, lemon verbena, tempura shiso leaf, more lactic, Greek yoghurt and stracchiatella. More time gives it white florals of baby's breath, elderflower.
Palate
Slightly spicy and drying. Beautifully viscous. Waxy. Softer and less intensely tropical than the best in class. Underripe Alfonso mangoes, passionfruit, grapefruit, avocado, parsley, white pepper.
Finish
Falls a little flat here. Tapers off quickly. Shiso leaf again. Stracchiatella again. Mirin. A smallest hint of passionfruit and limoncello at the end.
