Huge savoury sooty BBBQ smoke – beef jerky, pepper-encrusted Texas brisket, salty peat reek, and iodine. Wet barnyard and soy sauce. Sweeter notes of dried apple slices, blood orange, stewed plums, and charred red peppers. Slightly vanilla-custardy.
Palate
Medium texture. Arrives earthy and chocolatey. Plums and musty mango, and a hint of star anise. Roaring bonfire, flaming birch bark, salt-soaked driftwood. More smoked brisket, black pepper. Cooked vegetables – very earthy and roasted-sweet. Super deep toffee. Slightly mineral.
Finish
Medium. Sweetness creeping in – maple syrup, stewed plums, black cherries, raisin wine. More pepper. Root veggie chips, more birch bark, deep pine forest. More soy sauce.
