Description

For anyone visiting Caol Ila today, it might be hard to believe that it was once one of the smaller distilleries on Islay, with the Diageo workhorse now producing almost as much spirit as Lagavulin, Ardbeg, Bowmore and Laphroaig combined! Despite this, Caol Ila still isn't as globally recognisable as its Islay stable-mates, due to the majority of its production being used for blends, such as Johnnie Walker. This limited edition Caol Ila 8 Year Old Feis Ile 2025 was matured in a unique combination of refill casks and Pedro Ximénez/Oloroso-seasoned casks, before being finished in new Colombian Oak casks. This release explores Caol Ila's waxy character, delivering an intensely smooth, oily texture and a richer, unexpectedly sweet profile emerging from the Colombian Oak cask finish.

Nose
Subtle yet layered, with fresh dairy notes, chalky minerality, a salty sea breeze, butter, floral honey, chocolate tones, and refined peat smoke. With water, it turns sweeter and rounder, with more vegetal notes, dead leaves, and bare trees.
Palate
Powerful and expressive, noticeably sweeter than the nose suggests. Salty and lightly drying, with waves of pepper, smoke, and fruity oak. Woody smoke, croissants, apricot Danish, dark chocolate, crème brûlée, smoked ham hock, prune juice, and tar.
Finish
Long and dry, with sweet smoke, chilli heat, and lingering notes of smoked meats and medicinal peat. Herbal, rooty notes of liquorice root and aniseed, a cool lift of mint leaf, and charred oak.
