Nose
Extremely maritime, with seaweed, iodine, oysters, and a clean, fresh character. Hints of bitter almonds, deep forest after rain, moss, fern, dill, freshly crushed mint leaves, and apple skin. Also notes of leather, tarry smoke, walnut oils, wet newspapers, charred parsley, waxy, resinous smoke, old engine oil, melon, mandarin, embrocations, old cigars, nutmeg, vanilla, and a subtle Manzanilla Pasada.
Palate
Bold, with peat, cooked apple, and pepper, followed by fructose and bitter almonds. Can be very bitter (grape seeds), with hints of turpentine, white rum, tequila, and mescal. Features a bygone smokiness reminiscent of old car workshops and a bothy in winter, along with old resins, drops of iodine, herbal liqueurs (Benedictine), peated lime juice, lightly smoked fish, tarmac, walnuts, floral honey, and old mint.
Finish
Long and bitter, with dusty notes of flour and cocoa powder. It sparkles on the tongue, and offers mineral notes, black pepper, lemon balk, menthol, and gentle smoke.
