Caol Ila 17 yo 2007 (56%, Halcyon Spirits 2024, cask #306807, 273 btl.) Nose: antiseptics up front, with peppermint and raw wool. Then seawater, oysters and hints of heather honey. Nose
Smooth peat smoke with briny salt, heather honey, and floral notes. Tropical fruits like pineapple, mango, and peach, alongside brown sugar, caramel, and toffee. Ashy, meaty BBQ notes with a hint of oak dustiness, medicinal antiseptic, tar, and leather.
Palate
Initial burst of pepperiness and spicy ginger with peat smoke, balanced by honeyed sweetness, dark chocolate, cocoa, and coffee. Tropical fruit flavors, salt, seaweed, and chilli. Sweet and sticky barbecued meat, charred corn, roasted hazelnuts, vanilla fondant, and ashy peat smoke.
Finish
Medium to long with maritime freshness, vanilla, coffee, cocoa, and chocolate, leading to a tobacco leaf dryness. Some bitter notes, fresh green apple, Amaro, orange bitters, rye spice, and ginger. Long, soft smoke with a slightly sweet BBQ and lemon finish. Warm, buttery, and savory with milk chocolate and cream.
