Description

The Sansibar Whisky independent bottling company was started in Germany in 2012 devised by the organiser of the Whisky Fair Limburg, Carsten Ehrlich and CEO Jens Drewitz. The aim behind the business was to bottle quality Scottish single malts (and some rums) and market them with a link to the famous Sansibar restaurant on the north German island of Sylt. With only around sixty bottlings a year, this Caol Ila 1997 Spirit Shop Selection for Sansibar was distilled in 1997 and bottled in 2015 at 40.2% ABV, having matured for 18 years in a sherry butt. Only 599 bottles were released.

Nose
Delicate aroma of walnuts, earthy tones, old leather, and herbs, with light peat smoke in the background. Hints of caramel, sherry, sea breeze, and aromatic smoke. Richly herbaceous with forest floor earthiness, roasted nuts, and cooked blueberries.
Palate
Creamy mouthfeel with roasted walnuts, caramel, cedar wood, tobacco, and jam notes. A fine smoky note is always present. Salty licorice, sweet caramel, roasted bread, and dry charcoal. Savoury hints of coffee bean, sea salt, basil leaf, and a light touch of chocolate orange.
Finish
Medium-long and dry, with wood tones and tobacco. Elegant, ashy, and subtle herbal hints. Damp oak and tobacco leaf.
