Brilliant, clean and refined, this golden CAOL ILA DISTILLERS EDITION has a deep, sweet and smoky flavour profile that suggests the intense, sun-baked aromas of the island after a storm has passed.

Nose
Nutty and smoky with sweet smoke, cloves, and Christmas spices. Hints of ice wine, almond, Nutella on granary toast, and burnt sugar. Fresh peat smoke with caramel apple, cinnamon, papaya, and a flowery herb garden character. Medicinal.
Palate
Rich and thick with toffee apples, cloves, nutmeg, and cool wood smoke. Hints of oil, bruised rose petals, and soft peat. Molasses, rubber, porter beer, butter, caramel, and mint. Nicely rounded with smoke and oak. Spicy, oily with peat smoke, light caramel, Granny Smith, tropical fruits, and sea salt.
Finish
Long, briny and oily with a lot of smoke. Cloves and apple peel. Chocolate, floral, peat, cranberry, dark caramel, umami, light pepper, and salt. Smoke, white pepper. More fish oil (in a good way), brine, and a very slight hint of grainy mustard.
