Nose
Water brought immense and razor sharp medicine, green acid like from charred gooseberries, embers of peat, mineral salts and sardines in smoked olive oil. A deep, booming bass of peat smoke accompanied the undiluted flavor. Then coal tar, boiler fumes, raw hot grist, malt vinegar and pickled clams.
Palate
Immediate and massive notes of salty spaghetti water, industrial antiseptics, floor cleaner, antiseptic cream (Germolene), herbal mouthwash and salt-baked white fish. Seaweed, gasoline, old fishing nets and freshly poured tar. After adding water, more complex with dried herbs, nori, sushi rice vinegar, hot chili ramen, soy sauce, sea water and various notes of aniseed, ointments, bandages, lemon juice, miso and brine. A sea monster!
