Description

Ichiro Akuto drew significant inspiration from Scottish distilleries when creating Chichibu. In 2006, he had the opportunity to refine his distillation skills for a month at the legendary Karuizawa distillery, which was mothballed in 2000. Made from the Propino barley variety, this expression is both clear and deep, offering a pure sense of enchantment.

Nose
Delicate, refined. Camphor and ash, the nose opens with aromas of citrus zest, green walnut, and tiger balm. A very pleasant salinity blends with malty scents of great purity.
Palate
Lively, vibrant. Malty, the attack on the palate highlights fruits (pear, yellow melon, Golden apple) and spices (star anise, clove). Mineral (slate), the mid-palate becomes increasingly licorice-like and fermentative (malt beer).
Finish
Long, refined. Creamy (coconut), the start of the finish picks up the iodine notes from the nose (samphire, seaweed). Then, new spices (cardamom, nutmeg), flavors of straw, pressed lemon, and smoke swirls compete in intensity.
