Nose
Clean and coastal, with heather, dried grass, brine, toasted herbs, and hints of balsamic. Notes of fresh foc accia with sea salt and rosemary, gentle smoke, citrusy pineapple, and old newspapers. Thick, rich, sticky caramel, stewed fruits, and nutty undertones with a present, but not overpowering, peat.
Palate
Medium-bodied with hibiscus and plumeria tisanes, wispy smoke, sweet grassy-floral heather, pineapple cakes, guava jam, gentle maritime brine, and sweet saltwater taffy. Thick mouthfeel, rich flavors of caramel, cocoa, toffee, earthy peat, good minerality, and sherry influence. Smoky seaside brininess, pungent vanilla and caramel, melon, lightly baked pineapple, a bit of oak, and a dash of black pepper.
Finish
Medium to long, with pleasant achiote, pepper, salt, and sweet tropical tea. Long and complex, with lingering sherry and peat notes, leaning towards nutty and caramel. Gently tingling warmth, salted fruit notes, and soft pine.
