Released in 2005, this is the inaugural The Spice Tree batch which used suspended new oak staves within the casks to add additional character. The process was restricted by the Scotch Whisky Association as a breach of the traditional methods used to create Scotch whisky, resulting in The Spice Tree being removed from sale in 2006 and Compass Box has since changed the production method. Nose
Dry oak and spice with fudge, rye bread, banana, nutmeg, cinnamon, and ground ginger. Heavy vanilla, sweet cream, orange blossoms, wildflowers, rich honey, and clovey oak.
Palate
Orange peel, floral perfume, peppery oak, vanilla extract, bitter dark chocolate, and spicy explosions of ginger and pepper. Full, round, and sweet with spice and vanilla.
Finish
Spiced malt, coffee cake, milk chocolate, cocoa, and spicy citrus with a cinnamon-like prickle. Medium length with honeyed oak.
