Description

That Boutique-y Whisky Company is back with a second batch of three-year-old American single malt whiskey from Seattle's Copperworks distillery. The founders of Copperworks come from a brewing background and set out with the intention of making whiskey differently from many other American producers. The distillery focuses on malt, which is well suited to the climate and maturation conditions in Seattle and Washington compared to places like Kentucky and Tennessee. The wash undergoes an incredibly long fermentation – seven days at 21°C, followed by a further two weeks at 2°C! Batch 2 is a release of 275 bottles.
