Daftmill Farmhouse was granted a license in 2003 allowing its first distillation to take place in December 2005. As an independent distiller, owner Francis Cuthbert's main aim was to produce a light Lowland whisky, but - as the site is still an active farm - the distillery has a silent season in spring and autumn whilst work happens in the fields. The Drambusters
Nose
A surprisingly elegant and well-balanced PX hoggie, which displays dark fruits, along with rancio, soft earthy notes and plum wine. Water brings a more peppery and gamey edge with tobaccos and layers of cocoa and dried herbs. Also cola bottles, dates, raisins, light nuttiness, raw hazelnuts, green apple and freshly cut grass.
Palate
Weighty and thick in texture on arrival. A lot of sticky dark fruits, but also light meaty notes, crushed hazelnuts, camphor and delicate chocolatey notes. Water enhances the complexity wonderfully, bringing herbs, chocolate, tobacco and drier, more peppery tones. Cinnamon, cherry syrup, sultanas, freshly picked mint leaves, ginger spice and some treacle.
Finish
Long and lingering on peppery wood spices, treacle and freshly baked breads. Richer flavours of cinder toffee, molasses and date-filled cookies.
