- Nose
- Slightly sweeter than some of the sibling oloroso sherry butts, with stewed, syrupy dark fruits, sweetened black coffee, hints of strawberry and walnuts. Water brings out deeper richness, sticky sweet dark fruitiness, herbs, teas, bergamot, and thyme. Also delicate aroma, over-ripened orchard fruit, spice, vanilla, coconut sugar, black pepper, nutmeg, cinnamon, buttered madeira cake, pineapple cubes, banana esters, grapes, pencil shavings, and fresh grass.
- Palate
- Sweet, rich, sticky dark fruits, walnut liqueur, sweet black liquorice, strong fruit teas, chocolate sauce, and herbal cough syrup. Water enhances textural and sweeter components, bringing out more cough syrup, liquorice, and aniseed. Extremely rich and balanced, with good oily texture, creamy vanilla, fresh ground black pepper, tart green apple, aniseed/star anise, heather, grassy, green grapes, lightly waxy, banana touches, subtle choc lime, white fleshed fruits, and wood influence.
- Finish
- Long, thick, complex, balancing fruits with dessert wines and walnut oil. Rich and smooth, with a long, warm, spicy finish and a sweet golden syrup-like vein. Drying, with oak touches, green grapes, tannins, dried banana, slight vanilla custard, and toffee.
