Nose
Caramel, pineapple cakes, holiday spices: ginger, cinnamon, cardamom, dulce de leche, coconut cream, herbal, bergamot and earl grey tea flavored pudding. Toffee pennies and gooey, warm caramel. Cereals and sauvignon blanc white wine, a grassy herbal aroma with lighter chocolate and caramel notes. A little new make spirit aroma in the background, with a punchy alcohol. Air reveals cornflake cakes, some orchard fruits and a milky vanilla aroma. Malt on the edge of youth or power, grain-forward. Pale ale light bitterness adds depth. Warming, savory pastry, like puff pastry or phyllo on a spinach pie, buttery but not sweet.
Palate
Medium-bodied, caramel and herbal, dulce de leche, browned butter mochi, banana leaf, hints of charred herbs and burnt caramel, dank herbal toward the end with hints of yeast and pilsner hops. Generous layers of fruited dark chocolate and silky maple syrup, cushioned by a balance of rich, nutty spice, and woody warmth. Powerful palate showing shortbread biscuits, hints of rye bread and big vanilla-led flavours from the active bourbon cask. Warm caramel, toffee and oak spices. A little bit of citrus coming in towards the finish, lime zest and dark chocolate lingering. Rich and creamy flavors, lots of cooked down citrus. Proof heat builds slowly alongside some floral compound butter. Complex, with hints of char and stave cutting through the richness.
Finish
Medium to long with toffee and herbs, hints of heat. More chocolate and rich malt with suggestions of dark beer, and a dry punchy oak right on the finish. Quite rich and lovely smooth texture.
