Description

Fielden Rye Whisky - Hedgerow is the first edition in the Fieldnotes series, celebrating the diverse flora of the English hedgerow. It is crafted from a mash bill of 70% rye, 20% wheat, and 10% malted barley, and matured across a mix of Sauternes, vintage port, and ex-American whiskey casks.

Nose
Blossoms and rosehips with fresh cherries, jammed berries and cream, hints of aromatic wood. Delicate woody spice, cedar, nutmeg, black pepper, gentle toffee sweetness, and citrus (baked orange). Buttery cookie dough and Crème brûlée singed sugars, with a floral edge of bramble flowers, apple blossom, and rosehip. Citric undercurrent of blood orange marmalade and lemon oil, earthy teak, and dusty nutmeg. Oranges, peaches, plums, and dried strawberries, with vanilla, brown sugar, and a hint of mint.
Palate
Baked apples, sweet and tart berries in a crumble with vanilla custard. Quite hot but with lots of candy and spice, bubblegum, sarsaparilla, cinnamon, brown sugar, plump oranges, and clove. Flaky pastry with caramel and hazelnut, and freshly baked bread. Milk chocolate molasses chips and snickerdoodles, mixed berry and plum conserve, creamy vanilla oatmeal with orange zest and dark brown sugars. Red pepper zing, strawberry cream-filled donuts, warm baked rye bread with molasses, peppermint, maple syrup, cherry soda, and dried figs.
Finish
Hazelnut and chocolate with light tannins and rye spice, a touch of liquorice. Medium length with a lovely sweetness that balances out the spice. Freshness of the grain and minty, peppercorn spice. Herbal cardamom, chilli oil, fine, sandy cinnamon tannins, a reduction of Lipton peach iced tea, and toasted seeded rye bread. Rich cacao, oak shavings, dried apples, cinnamon candy, and strawberry lemonade.
