Description

Plans for the Spirit of Yorkshire Distillery began in 2014, aiming to create Yorkshire's first single malt whisky. Commissioned in 2016, the distillery operates on a 'field to bottle' principle, using 100% homegrown barley from Tom Mellor's farm in Hunmanby. This Filey Bay Moscatel Finish is an English single malt whisky initially matured in 200L ex-bourbon casks before being transferred for a finishing period to 250L ex-Moscatel hogsheads sourced from Spain, which had previously held Moscatel wine for ten years. This process adds depth and layers of fruit and sweet spices to the whisky. It was launched in March 2020 as a limited edition.

Nose
Sweet, fruity, and spicy aromas with notes of brown sugar, honey, maple syrup, crisp green apple, tropical fruits (pineapple, peach), candied orange, cinnamon, all-spice, white pepper, marzipan, lime, bitter orange marmalade, ginger, custard, melted butter, and acacia honey.
Palate
Initial youthful heat and peppery quality, softening to sweet notes of brown sugar, caramel, honeycomb, and butterscotch. Develops into green fruits (apples, pears, gooseberry), ripe tropicals (pineapple, peach), and dried fruits (sultanas, papaya, candied orange peel). Warming spices like cinnamon, all-spice, clove oil, crystallised ginger, and cocoa powder are present, along with black pepper, aniseed, and a lively vegetal vein.
Finish
Decent length, warming and spicy. Sweetness and fruits fade, leaving notes of toasted oak, wood, baking spices, candied ginger, lime, vegetable notes, green apple, brown sugar, and rhubarb and custard.
