Description

This is the second release of the Spirit of Yorkshire Distillery's Filey Bay Sherry Cask Reserve, a rich and spicy single malt whisky matured solely in first-fill Pedro Ximénez sherry casks which have been maturing in their warehouse since 2017. This expression offers plenty of dried fruit, dark chocolate, and tangy citrus notes.

Chocolate cake, sweet popcorn, strawberry liquorice, anise, marked citric streak, nutmeg, baked apple, dried apricot, marzipan, candied orange peel and chocolate. Over time, it becomes softer and fruitier, with an impression of chestnut honey.
Palate
Crushed cinnamon and nutmeg, blackberry, cooked peach, honeycomb, lively but not invasive spiciness, bitter notes of rhubarb and liquorice root, distinct salinity, blueberries, orange, candied citron, marzipan, fruit plum cake, baked apples, cinder toffee, chocolate orange and fruit cake.
Finish
Lasting dried fruit sweetness, more nutmeg, quite long and dry, saline, spicy, baked apple, chocolate and a hint of coffee.
