Built in 1891, Glenallachie distillery didn't begin production until 1898. The whisky from this distillery initially was destined for the White Horse blend, but since Bacardi's takeover in 1998, the majority of its output now heads for the Dewar's range. The Pedro Ximénez puncheon is a clear point of interest, with figs, dates and molasses leading into treacle, dark chocolate and spice. The long, dry, tannic finish gives that sweetness a firmer edge; I like the contrast.
