Description

Glenfarclas 2011 Single Cask #1994 / City Hunter. Glenfarclas is considered by many to be one of the finest distilleries in Speyside. Its direct-fired stills produce a heavy single malt that is almost exclusively matured in Jerez sherry casks. The distillery focuses on single malt over blends, and a cool microclimate around the distillery that means that their casks are particularly stingy to the "angels," resulting in an incredible depth of stock. Glenfarclas also feel they share some credit for the modern day love of cask strength whisky, introducing their acclaimed 105 proof expressions back in 1968. The whisky was distilled in 2011 and laid to rest in a first fill sherry butt #1994. The cask was selected by Hideo Yamaoka for Whisky Mew.

Nose
As you might expect - lots of fruitcake, dark chocolate, coffee, raisins, figs, panettone. It was expressive and aromatic with notes that poured forth - yet it remained well-rounded and smooth, albeit tended towards the brighter side of the classic Sherry profile. No hints of sulphur either.
Palate
Medium-bodied, not as heavy as the aromas might have led you to believe, but still reasonably buttery. More of that milk chocolate, coffee, fruitcake, but more honeyed here, with a touch of chocolate-coated orangettes. There's alittle bit more on fruit jams here, and also just a touch of herbaceousness - parsley.
Finish
Medium length, pretty much an extension of what was found on the aromas and palate, with alittle bit more grittiness of coffee grounds. The oak shows a little bit more woodiness here but doesn't get dry.
