- Nose
- Toffee caramel, sweet lemon and apples sprinkled with cinnamon. Sweet barley notes and brown sugar. Poached pears, butter pastry, honey, golden raisins. Rich orange peel and cinnamon spices. Fresh pear with nutmeg, dried barley and caramelised raisins. Quite sweet, barley sugar, sherry, citrus notes (lemon), a little resin, oak and a bit of cinnamon. Honey and raisins too.
- Palate
- Sweet and smooth, with a buttery mouthfeel. Yellow apple and raisins again, with a soft underlying tingle from the oak spices. Smoothness, easy caramelly maltiness and balanced nutty sherry notes. Lots of dried fruits and wood spices. Bitter sweet flavour profile with juicy raisins and sultanas combining with oak tannins. Rich and soft, dried fruit. Cinnamon and sweet sherry wood. Sweetness and quite syrupy at first, some barley, oak, malt and nutty notes. Some spices too with some bitterness. Quite mouthwatering and rather easy drinking.
- Finish
- Not too long, very malty, a little drier, with some lingering nutmeg and pepper. Gently drying and creamy. A quite drying finish with bitter citrus peel. A winter christmas boutique of cinnamon, pine cones and star anise. Not too long with some oak dryness, malt and sherry notes. Hints of leather.
