Nose
Winey, sweet and sour, cooked rennet apples with hot butter and caramel. Humus, earthy notes, fresh mushrooms, high-end pu-erh tea, quince jelly, mirabelle plum, nectar, sweet white wine. Complex and delicate. Ripe fruit bowl, marker pens and parsnips. With water, more woodiness, Peach Schnapps and marzipan.
Palate
Western fruits, tropical fruits, waxy, empyreumatical and smoky notes, a little spices. Big notes of crystallised quince. Superbly balanced. Apricot jam, treacle toffee and lots of European oak. With water, a light mintiness and camphor character.
Finish
A bit drying. Thrilling. Malty, with blood pudding, and European tannins.
