Nose
Fruit cake and banana cake drizzled with honey, linseed oil, orchard fruit, mixed nuts, nougat, toffee, raisins, cinnamon, nutmeg. Aromas of ripe citrus, winter spice, oak, dried apricot, and toffee. Toffee and vanilla up front, then dried apricot, orange peel, toasted almonds, and polished oak.
Palate
Honey sweetness, generous fruit (physalis, orange juice, fruit cake), buttery malt, vanilla fudge, crispy pasty, cinnamon and nutmeg spice. Smooth and complex, with flavors of caramelized apples, nutmeg, and creamy vanilla. Mid-palate reveals hints of baking spice and orange zest. Sweet caramel and honey up front then some malt, pears, figs, vanilla and cherries all underpinned by sherry. Caramelized sugar, baked apple, raisins, milk chocolate, and warm baking spice with a rounded, coating mouthfeel.
Finish
Long, fresh barley with nutmeg and cinnamon spice, sweet sultanas and currants. Long, warming, and elegant, with lingering oak and soft spice. Ginger and dried apples with oak, tannins and more sherry. Long and gently drying, with cocoa, oak spice, and a last flicker of citrus zest.
