Nose
Smouldering leaf bonfires, 'tarpaulin-covered railway sleepers on low-loader and a firewalker’s sneakers', charcuterie and venison cooked in red wine vinegar. Smoked meats and charcuterie boards join BBQ briquettes and freshly laid tarmac, whilst smoked cheese and cold cream sit with chewy nougat, burnt meringue and fire-pit toasted marshmallows. Wet bonfire smoke, packed full of still moist leaves and waterlogged fallen vegetation. With water: filthier outlook – bicycle tyres, wellington boots and the fallout from some kind of industrial disaster zone, barn yards and hay lofts – all roofed in thick tar. [1, 5, 7]
Palate
Hickory wood smoke, charred bacon and burnt marshmallows; also 'licking a barber’s razor strop', tar, aniseed and the scrapings of a burnt curry pot. Immediate and enveloping smoke – log fires, industrial chimneys and road surfacings alongside crisp bacon, balsamic and clove studded ham. Ash pervades the mid-palate with salted toffee and a touch of sweetness from candy canes. With water: caramel and hard candy to the smoke – a sweeter billowing of murky goodness. [1, 5, 7]
Finish
Dry, ashy, clove-ish. Long with clove cigarettes, balsamic and grimy sweetness. [1, 5, 7]
