Description

This elegant organic whisky from France is one of two 'twins' released by Domaine de Hautes Glaces, both made exclusively from 100% rye whisky using identical production techniques. The difference between the two bottlings comes solely from the plot of land the rye was grown on, offering a rare opportunity to taste the difference in terroir. 'Epistémè R18P23 Yellow Circle' was distilled during the Summer of 2019 from rye grown on the slopes of the Vulson, the rhyolitic stone extinct volcano from which the distillery takes its water. Its farm and distillery have been Regenerative Organic Certified, celebrating commitment to soil health, livestock care, and farmer fairness. It has been matured twice, first in 'feuillettes' (smaller 112L casks crafted from mixed oak staves) and then in an ex-Cognac cask [1, 2, 7, 13].
