Highland Park remains the most northerly whisky distillery in Scotland, located in Kirkwall on the Orkney Islands. Founded in 1798, it is known for its unique combination of sweetness and smoke, utilizing locally cut peat with heather, and maturation predominantly in European oak sherry casks.
