Nose
Slightly above average peat for Highland Park, with heather honey, tannins, and profound saltiness. Rich, spicy oak backbone, subtle honeyed sweetness with Manuka and orange blossom notes. Floral potpourri, slight smoky peat, licorice, dried tropical fruit, hint of salinity, lemon, citrus, and cooked cereal notes.
Palate
Silky and smooth with bold smoke, lightly oiled barley sugar, and dark licorice sweetness. Prim spices, honey, light smoke, and a quick surge of exotic fruit. Soft malt, toast, sweeter fudgy, and heather honey notes. Citrus zest, cinnamon, clove, and warm baking spice, supported by polished oak.
Finish
Long, increasingly smoky with teasing spices and molassed sugars. Aged oak pulse, softened by phenols. Complex, slightly drying with clove, cinnamon, a slight medicinal quality, lingering peppery notes, and a hint of herbal bitterness. Warming, with refined smoke, subtle spice, and a quiet sweetness.
