Description
The Holyrood Noir - Bordeaux Yeast is an innovative Lowlands single malt Scotch whisky from Holyrood Distillery in Edinburgh, known for its experimental approach to whisky production. This expression is part of the 'Noir Trilogy,' which explores the influence of different French wine yeasts on whisky flavor profiles. It is fermented using 60% Pinnacle M yeast and 40% BP725 yeast. Maturation occurs in a combination of ex-bourbon barrels and Bordeaux barriques, enhancing fruit complexity and texture. The result is a vibrant and expressive single malt with notes of cherry, strawberry, and blackcurrant, complemented by a subtle hint of Scottish tablet. It is bottled at 47.1% ABV and is non-chill filtered.
