Holyrood Pitch, Oloroso Hogshead Cask, 2025, 49.4%

Holyrood Pitch is a single malt whisky from Holyrood Distillery in Edinburgh, Scotland. It is the fourth and final release in the distillery's 'Founding Series', which explores experimental approaches to whisky making, particularly focusing on yeast. This expression uses a unique combination of Scotch Pot Malt and Brown Malt, typically found in dark porter beers, and is fermented with red wine yeasts (Pepe Nero and Toro Nero) to enhance chocolatey and red fruit characteristics. It is matured in Oloroso hogsheads and bottled at 49.4% ABV, non-chill filtered, and without added coloring.
