Description

Inaugurated in 2005 within the Rockside farm, the Kilchoman distillery this year presents two 8-year-old whiskies made from barley cultivated on-site, displaying a similar phenol level (20 ppm) but from different fermentation times, aiming to explore the influence of this production stage on the organoleptic profile of the single malt. Nose
Fine, slender. At first scent, aromas of agave, soot, toasted bread, and turpentine emphasize the empyreumatic character of this Kilchoman. Upon aeration, ointment-like aromas add a characterful medicinal touch.
Palate
Refined, energetic. Both lemony and floral (hyacinth, lilac), the palate's attack stages a rather dry, translucent peat. Very saline and maritime (shellfish), the mid-palate is in turn medicinal (iodine tincture, methylene blue).
Finish
Long, dense. The start of the finish conjures a Scottish moor where freshly cut blocks of peat dry. The aftertaste strongly recalls the agave notes from the first scent. It also evokes the time of harvest (straw, alfalfa).
