Nose
Fine, complex. Simultaneously medicinal, herbaceous, saline and iodized, the aromatic palette is also fruity (pear), vanilla and milky (coconut). With aeration, an elegant peat takes possession of the olfactory space, letting escape scents of heady flowers (violet, lily of the valley) and aromatic herbs (sage).
Palate
Clean, direct. Having become fatter and more chocolatey, the peat has at the same time gorged itself on mineral salts. Then, a very nice lemony and vanilla sequence then brings a pleasant freshness to the taste palette. This finally extends to flavors of ash, soot, green olive and samphire.
Finish
Long, assertive. A delicious invitation to savor an infusion of sage and anise, the finish is remarkably fresh. Increasingly gourmet, it reveals flavors of flan, rice pudding and porridge. Mineral (slate) and herbaceous (cut hay), the retro-olfaction makes us contemplate blocks of peat drying on salt marshes.
