Description

This Kilchoman 2009 Single Cask #285 was bottled exclusively for Abbey Whisky in 2014 at 5 years old. It was matured for over four and a half years in a fresh bourbon barrel before being transferred to a Pedro Ximénez cask for a further four months of finishing. Bottled at cask strength of 58.3% ABV, this release yielded 270 bottles.

Nose
Rich and thick, with sweet and very peaty notes, a good balance of sherry and peat. Hot cinnamon pepper, vanilla, and a gentle earthiness. Also, vanilla biscuit sweetness, yellow fruit gums, marzipan, sugarcane, and strawberry jam. Hints of iodine.
Palate
Earthy and peppery with thick sherry sweetness, like peated candy, burnt sugar, dates, and sultanas. A huge alcohol bite. More peat, fairly dry, with icing sugar, fruit candy, and caramel. Gets a tad spirity/liqueur-like with wood spices.
Finish
Very long, with sweet smoke, peat reek, sugar, leather, and tobacco leaves. Ashy and still very sweet.
