After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. This is a fresh and fruity 2011 Linkwood single malt from independent bottler Thompson Bros, matured for a decade before being bottled. It was distilled in 2011 and bottled in 2021, with an outturn of 264 bottles.
