Description

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. While waiting for the whisky to mature, the Thompson Bros bottle whiskies from other distilleries. This Longmorn 2011 11 Year Old is a marriage of two first-fill bourbon barrels, featuring original artwork by Scottish artist KMG on the label.

Nose
Custard creams, redcurrants, shortbread, buttered scones, tinned pineapple, pine resin & pear frangipane, ripe peach. Intense and slightly sticky sweetness with vanilla, fudge, soft woody sweetness, strawberry, squishy banana. Quite vibrant with honeycomb vanilla ice cream and caramelized sugar sweetness.
Palate
Juicy fleshy fruits, custard, cheap trifle, shortbread, pineapple cubes, dedicated coconut. Intense sweetness with plenty of tannins, some fizziness and creaminess.
Finish
Juicy with balanced oak and fleshy white fruits. Very creamy and round with a few dry tannins, slightly astringent due to its young age.
